I keep mine frozen.
I always lose track of my ginger cause I don’t use it that regularly, and I’ve heard it can be iffy to use once any mold starts appearing, so freezing it definitely sounds like the way to go for me

I had a model from Microplane that I loved but it broke within 4 months time. The plastic frame surrounding the blades cracked.
Not what you're asking about, but I recommend you also get a microplane, great for zesting, garlic, nutmeg, etc.
I've been using a Microplane zester/grater for longer than I can remember. At least five years.
Ikea graters offer convenient design
They are brilliant because it sits on the surface and goes straight into the container - no mess... it even comes with a non-grater lid for storage in the fridge - and there's 2 sizes of grate (?).
Its a lot easier to grate on a horizontal plane than a vertical one, and the rubber grip on the bottom is super stable.
The cool thing is that the grater also doubles nicely as a hand grater when you want to grate directly on food.

I suffered two cuts on separate occasions that probably needed a stitch or two from that damn thing.
The edge tore out a chunk of my arm. I think I needed 4 stitches.
i took the entire tip of my finger off (halfway through the nail and up, at an angle) with a brand new Y peeler that skipped off a bump on a lemon.

They’re not perfect and I wish they would use less plastic, but otherwise I’ve found them to be better designed than and longer lasting than most kitchen tools.
