For just a small number of tortillas, like if I'm making quesadillas, I use a frying pan.
Same. For a medium amount of tortillas, I use the pancake griddle. For a boatload of tortillas, I use the microwave in damp paper towels method.
Same, I use a cast iron though. Gets nice grill marks on them.

I truly think that’s because no one else makes a similar taco.

I can definitely vouch for Roberto's/Alberto's, and even Albertacos during the '00 to '04 period.
I consider flour better for soft tacos, and freshly made tortilla chips (don't keep well, but my are they tasty fresh).
