Uniform baking results
Last night i found an All Clad Waffle Iron and a Pizzelle Baker $12 in total.
Modern pizzelle irons are absolutely trash. We’ve tried several and the cookies are always too thick and the Teflon coating doesn’t cook them correctly.
This had been my experience with modern teflon coated waffle irons, too. They just don't work properly and the waffles don't get crispy on the outside but stay soft on the inside like they are supposed to.
This pizelle maker has been used by my grandma year after year for 40+ years.
Easy to use and clean
My mom has had one since the 80s. It's a waffle maker/pizzelle maker, removable cast iron plates that you just flip. I think hers is rival, which is always surprising to me because it's not a bifl brand now as far as I know.

Looks like you were reading the recipe upside down. Rookie mistake.
It looks like you used way too much batter, and opened the maker too soon when it seeped out. unfortunately this can happen 🙁
You need to add a binding agent, something like xanthan gum, or possibly more gf flour if the batter is too runny.

Pizelle are a type of waffle cookies (or is it waffle cookies that are a type of pizelle? hum...) so I'd say, you might want to look into that direction.
