This is what we did, plus the extra kit to secure it that it came with. We are in an extreme wind zone and it hasn’t budged.
Rebar ground stakes....cut rebar to 2 ft sections, bend top over like a candy cane hook so it will fit over trampoline legs.

Would the snow and cold ruin them if left outside? For the love of pete don't tell me I have to disassemble it and reassemble it in the spring?!?
We leave the frame up, everything else gets put in the garage. You're right it's a PITA.
Growing up we would take the padding that covers the springs off and store it in the shed. The rest would stay up and we would jump all year round.
If I were you, I'd take down the actual jumping surface and the springs. Over a couple winters it saves you the headache of a ripped surface or rusted out springs.

You need the legs well supported so I would dig about an inch lower than needed and then add back soil.
I’d probably throw some gravel in the channel I dug to help with drainage and stop it being a muddy mess when it rains, but I don’t know if that’s needed
The elevated dirt below the jumping surface caused a family member to bottom out, hitting the ground, when jumping.
When my son and i jump (290 lbs combined) it does not bottom out.
