Fast cooking times with induction
Boiled a pot of water with six eggs in under 3 minutes.
Now, I think it will be perfect for slowly caramelizing onions because of the ability to set the heating at a very constant level.
2 pounds of frozen tortellini ready to eat in 8 minutes and the sauce for it was heated nicely on medium at the same time.
It heated as quick as gas but more evenly.
Portable and convenient for outdoor use
Outdoors needs no extractor fan either.
On hot/humid days when we're grilling, it pains me to boil water (e.g. for corn) indoors.
My portable is a workhorse as well & travels with me when needed.
Stable heating for consistent cooking
I’ve had induction for more than a decade and have used cast iron on it the entire time, including an antique one that has the heat ring, no issues with scratches.
It’s much better than my electric stovetop (pretty crazy how fast and responsive it is), but there's one thing that I don't understand.
It's crazy fast. Not all pots heat that fast, but my cast iron definitely does.
Works well with larger pans
the smaller coil is fine with a larger pot for boiling or simmering. Not so fine for browning or sauteeing.

Sounds like that’s not really a problem.
For cast iron, yes. Stainless or nonstick I have not had an issue. Cast iron immediately scratched our induction top.

they require the pan to be seating at all times or they'll switch off and require you to turn them off and on again.

What portable two burner induction cooktop do you recommend? I plan to use it for basic meals and running my Presto (induction ready) pressure cooker / canner at stable temperatures.
It does reduce ambient heat a little, but the pot and its contents also radiate heat even though the burner doesn’t.
I love it, but be advised it makes some annoying sounds the lighter the pan, and the higher the power.

I've owned & used that exact Duxtop model for 4 years & it's the best induction cooktop I've used, including a built-in and a few cheaper models.
I have a Duxtop single portable induction burner. I love mine! had it or a year.
If you cook with only stainless steel, then the Duxtop is fine. But if you have cast iron, the Duxtop will be lacking.
