The trick is to not undercook the waffle. Don’t open the waffle maker until the waffle is fully cooked, otherwise it sticks on both sides and splits in half and is a disaster to clean up
I just use butter with mine, and it works pretty well.
I use a small splash of normal cooking oil and spread it with a brush, for the first waffle. The rest just works... But: my dough usually has quite a lot of butter or oil in it, that helps a lot with them not sticking.
I've been told that the propellants in Pam etc build up in the surface over time, ruining the non-stick quality. I brush on a SMALL amount of canola. No issues. That said, I agree that you have to make sure the iron is thoroughly pre-heated and you don't peek too early.

Belgian waffles are made to eat with toppings... USA waffles cafes unfortunately are mostly nasty, if you ever travel to Germany, try their waffle cafes, they are everywhere and delicions, 10x better than nasty US waffle cafes....
You can do that will thinner less fluffy waffles and the crunch is more satisfying.

Look for the cuisinart traditional round waffle maker. It's not the most high quality product but it makes perfect thin waffles.
The only thing that has gone wrong is the temperature indicator light burned out. I found a place that sold replacements so, this machine is as good as new.

Waffles and waffle irons I've been wanting to try my hand at making waffles for a while and recently came across a recipe for yeasted waffles (in Mimi Thorisson's book) that convinced me it has to happen.
Seems to me that the stove top waffle iron is just as large and single purpose as an electric waffle iron just more fiddly to use.
I used one a long time ago and it was the most intensely stressful breakfast I have ever made.
