The keenness of the apex isn't determined by holding a laser consistent angle. If you understand sharpening theory well you can have poor angle control which will result in a rounded bevel, then finish with slightly raised angle microbeveling and produce a very keen apex that cuts well and glides through material with ease.
Also, you can get those little contraptions that will hold the angle for you.

Chef's choice is ok. If you don't like sharpening and don't want to spend time learning to do it well it's an acceptable choice on western style knives.
A perfect angle is impossible. But the japanese high carbon steel can even have single side bevel and up to 7 degrees instead of the 15+ on other knifes.
This is a bug not a feature, if you are not sharpening knives very often. Small irregularities in the speed that you pull a knife through such a machine can easily lead to a visible overgrind.
