MS200V is a solid choice for a starter. The bundle you're getting is a good deal, especially with two lights and softboxes.
The MS200V should serve you very well. The modeling lamp on the 200V should help you visualise the final result enough but then having way more output will help your images so much more

I’d suggest the AD200 over the 600 to start with.

Just me, start with a Godox full-sized speedlight for Canon with TTL and HSS (TT685 II-C, V860 III-C, and V1-C are the current models; the older TT685C and V860 II-C are good, too).

So also in the market for 1 or 2 strobes, however on a budget.
They're just not great for bigger subjects/being used from farther away/filling bigger modifiers evenly, because the fresnel heads focus the light tightly and have hotspots.
Any decent strobe is going to overpower the SL60 by quite a bit (unless you use it at like 1/32 power, which you won’t).
You will be controlling the strobe power with the aperture and continuous light with the shutter speed after that, so yeah you can combine them both.
