Powerful enough to fill large softboxes
Those lights you're getting are able to fill the biggest of soft boxes.

Strobes like the MS200V offer more power and better control of light for portraits and product shots.
The modeling lamp on the 200V should help you visualise the final result enough but then having way more output will help your images so much more.

They’re customer service is excellent. And when things break (which with students, they will), they repair locally.

I mostly own godox/flashpoint for my photography business. I don't think the cost for them is worth it since the difference in quality of light is not going to be noticeable.

I'm sure a QT in colour mode would be perfect without having to pay 3times for a different brand.

Just me, but if you've never used flash/modifier before *at all*, it may make more sense to start slow and small.
Confusing product lineup
Godox proliferated their AC-powered manual monolight lineups like rabbits, and never made much effort to distinguish between them.
Older models lack built-in radio receivers
Highly recommend if you are going to look at Godox AC-powered manual strobes, that you stick with Mk II or Mk III models.
Inconsistent output and color temperature
if you want to purchase something that has a better reputation for reliability and color consistency then there are more reputable brands -- but you'll pay for them.

I’d suggest the AD200 over the 600 to start with. And for modifiers I’d start with a simple shoot thru umbrella.

Turns out i find the creative process really enjoyable and have started to upgrade some gear.
If you're doing small tabletop product shooting, speedlights may be more than sufficient.
I highly recommend the godox ms300s (or flashpoint equivalent), they’re like $100/each and real workhorses- great to learn with.
You will be controlling the strobe power with the aperture and continuous light with the shutter speed after that, so yeah you can combine them both.

None of the AD strobes have an AC power option out of the box; and only the AD400 and AD600, iirc, have AC adapter accessories you can purchase as add-ons.
I'd ideally want a studio strobe equivalent as I already have a 580EXii speedlight and a Godox CT16 trans/reciever set so to if I'm paying XXX amount for what amounts to a souped up offering from Godox I might as well go for a full studio flash portable option.
They don’t come with a cable option though I think.

If you want to freeze action like that you should be prioritizing short flash duration over shooting in HSS.
*Only if you can kill the ambient.* If you wanted to freeze action using flash outdoors as daylight fill, HSS is the only way.
TL;DR: get a speedlight (hotshoe flash), or save up for a Godox AD strobe if you need to freeze fast action with something IGBT-controlled; not these voltage-controlled AC monolights.
You would be better off with an AD model which will give much lower flash duration than those AC powered units.
