I usually use parchment paper when I am dehydrating fruit leather.
I've had better luck with parchment paper for fruit leather; you can even leave the fruit leather on the parchment paper when you cut it and make homemade (short) fruit by the foot.
I just bought a dehydrator and used parchment paper for fruit leather, but it always tears when I remove it which is really annoying and wasteful.
Using parchment paper reduces airflow and lengthens drying time
It will take longer for them to dry as it will block air circulation and leave a puddle that the tomatoes are sitting in.
The whole point of the metal shelves is to have a good air circulation for drying.

If they look and feel dehydrated, they’re at least dehydrated enough to sit overnight to test.
I like mine a bit softer but I usually eat them within two weeks.
I always take one piece out, let it cool for a minute or so, break it in half then squeeze it hard to see if any juice comes out of the cut part.
