I have been considering getting a crane jib to achieve this, but I am concerned that the shots will be shakey.
Jibs that are well balanced and weighty will work without shake.
A balanced heavy duty crane can do the job you want it to, although I’m certain there’s cheaper DIY ways.
If your table is long, I'd suggest rigging up an overhead slider with motorized remote head that will allow for smooth sliding.

General thoughts on gimbals vs. glidecams
The motion feels robotic because it IS robotic... literally.
the movements are way different than the crane or a similar gimbal but they’re more fluid and floaty in the way that a stedicam is.
I would reach for the Gimbal first, but if I had a rugged shoot in the outdoors Glidecam for sure.
