Vacuum sealer food saver? What brands do you like or dislike and why? Looking to get my first vacuum sealer and I see stand up and idk “lay down” 😂 different sizes, different ways of sealing… where on earth do I begin? Thinking I would like to vacuum seal jerky, freeze dried cheese, shelf stable cheese, herbs, and meats for the freezer…
So...convince me to buy another vacuum sealer, one that might cost ten times the one I have now. For those who make and sell charcuterie, what are the real advantages?
Reliable sealing performance
I keep it as a back up.
How do you prevent imbedding the texture from vacuum sealer bags into meat?
When you see that almost all the air is out of the bag, just hit the seal button, and it will stop vacuuming and seal immediately.
Effective for freezing bulk meat
I have never used it to reseal food bags (like chips). But it is worth every dollar when it comes to freezing bulk meat.
I don’t use it to reseal bags, but I do use it for freezing meat like ground beef.
Have you never considered a double seal? Have steaks and roasts in the freezer for a few months that go into the sous vide afterwards.
Prevents freezer burn
it is absolutely worth it and especially as a costco member it is even more absolutely worth it — stuff takes much, much, much longer to go bad/freezer burn when vaccum sealed.
Cost-effective in the long run
Once I realized that, pffft....these things are frikkin must haves.

FoodSaver rolls work well with Anova sealer
Foodsaver rolls in Anova vacuum sealer pro? Has anyone here tried using Foodsaver rolls (mainly curious about the 28 cm wide ones) in Anova's vacuum sealer pro (the larger model that you can store a roll in)?
I use both sizes of FoodSaver rolls in my Anova sealer with no issue - they work great!

Versatile use of rolls for larger items
The bags are more convenient, but the rolls are much more versatile.
You can't fit a roast into an 8 x 12 bag.

I can typically make a bag (from a roll) in under a minute.
Cost-effective alternative with off-brand bags
Yes it's more, but it's 4.5 pennies per bag more - hardly a lot for bags that will actually work with the foodsaver.

Double sealing prevents bag breaks
Yeah I double seal for anything longer than 6hrs.
I've never had a seal break since I started double sealing.
Effective for long cooking times
I have never had a bag seal break in the cooker, and I have done 48 hour Short ribs.
Customizable size is beneficial
I prefer the rolls off amazon over the bags, then I can make then whatever size that I need.
Triple sealing can prevent bag failures
I always triple seal my foodsaver bags at each end and so far have never had a problem.
Seal it 3 times but space them apart not all on the same spot.
Good heat seal prevents bag failure
I've never had an issue with bags failing at higher temperatures, if you have a good heat seal, the plastic is repolymerized, it shouldn't come undone at any temperature below it's melt temperature (>100C).

The only benefit of the Anova is the double seal and better ergonomics.
Motor strength concerns
The foodsavers and other cheap ones just have weak motors and don't do a great job.

My Food Saver seal button doesn't work when the vacuum is running.

I've had to at minimum double and sometimes triple seal things both wasting bags and adding to the time it takes to make the bag.

Mine was 1200 or so. This one should last me for about 10+ years once it comes in.

The rolls on some of the Amazon bags are too large to fit in standard Foodsaver machines.
Bags fail at high temperatures
High Temp vacuum sealer bags? I made Kenji's Pork Carnitas this weekend, cooking them at 170F for 10+ hours this weekend and had 2 bag failures during cooking.
I think the issue with food saver's in general is they have a very thin seal and the machine doesn't get that hot when sealing either.

the sealer I bought my parents has a feature to do two seals at once (basically what you're describing)
Ye olde double seal helps maintain the vacuum seal in your bag the same way a double set of doors keep noise and weather out of a building.
I take the extra time to take a paper towel to dry the inside of the little flap before the second seal.
fold the top two inches of the bag inside out before you put the food in to help prevent touching and contaminating the sealing area.
