For sure on the smooth soups! ProTip: If you want smooth and still some chunk, take a few cups of the chunky soup out before blending and return chunky portion after soup is as smooth as you like.

This is the best strategy for any bean soup imo. I usually blend about half of it then put it back.
> just try not to blend too much meat

Immersion blender worth it for that alone.

Cautionary Callouts

Know the pitfalls before they catch you off guard.
Over-blending potatoes can yield a gluey texture
Blenders can burst the starch capsules in potatoes leading to a gluey texture.
Definitely gluey, maybe it can still be used for gnocchi?
An immersion blender is definitely not the tool for the job.
make sure you heat it in the microwave for a minute or two - also cuts down on starchiness.
Immersion blenders may not achieve ultra-smooth textures
Whenever I’ve used an immersion blender for a soup, it never turns out quite as smooth as using a normal blender.
I find my immersion blender isn't good enough for smooth soups.
High power may cause splatter mess
Before you use it, fill a pot with plain water and try it out because you don't want to find out how powerful it is by painting your entire kitchen with butternut squash soup.
Design and safety concerns regarding contamination risks
If hand blenders are this bad, then do I want to know about store-bought purees or any pre-processed food for that matter?
it seems to be a problem with the design of hand blenders and how the self lubricated bearing part gets contaminated with the food.
I’m not sure how applicable this is to whatever individual immersion blender one has.

Health concerns about plasticizer leaching in hand blenders
I found this article interesting because another post here had recommended stainless steel hand blenders as a way to avoid using plastic blenders.
am I correct in assuming that I doesn't matter if your hand/immersion blender is metal or plastic, the problem is stuff leaking out of the blender into the food?
Please someone just tell me what blender/food processor I should get that doesn’t have plastic.
