Go to a restaurant supply store and get some legit "commercial" sheet pans or 'jelly roll' pans, like those made by Chicago Metallic.
Off the top of my head they were definitely the highest quality baking sheet stuff we had in stock.

I've had great success with a stainless steel baking pan that's solid with no rolled edges, no rust issues.
Rolled edges are there to strengthen the pan and prevent warping, so if you're only using the pan for a few projects a month and cooling your product correctly, then you should be fine.
Material differences: aluminum versus stainless/steel
The thermal conductivity of aluminum is much better than that of steel. It will heat up quicker and be more evenly distributed.
If you're baking at home though, I recommend aluminum; it's cost efficient, light weight, and achieves a more evenly baked product, especially if you're tackling cookies or roll cakes.
Stainless is great for pans because it is considered non-reactive, so acidic sauces won’t become discolored or metallic tasting.

Ceramic pans are just about as good as PTFE straight out of the box, but they will lose their nonstick properties much faster.
You just really need one non-stick skillet, not a whole set.
Proper oil usage and temperature control are critical for nonstick performance
Which is why you use oil, so it doesn't.
Usually means it's either too hot or the side touching hasn't seared enough to cause it to release from the pan (like chicken is so want to do).
I'd rather leave a bit of meat stuck to the pan than risk any health problem by eating Teflon.
Also, don't use olive oil/ev to saute.

I don't normally have problems with these cookie sheets, but it warped in the oven and now the cake is not even.
The only baking sheets I haven’t experienced warping with are the old ones you find at grandmas house and look like they’ve been through hell and back..
