Most durable ("Buy It For Life") slow cooker brand/manufacturer? Pretty disappointed at my just 3 year old Hamilton Beach slow cooker stopped working (doesn't heat anymore.
I had one and it died within 2 years with the same issue as op.

The low setting cooks very quickly and I feel it ruins the taste.
It was already overdone after only 5 1/2 hours, even on low.
My Hamilton Beach slow cookers are just terrible, run wayy too hot.

I don’t think it’s that smart. I have the same one and I think it just turns it to warm when it reaches temperature.

May not reach desired internal temperature for certain meats
A probe isn’t needed for things like that. You’d use it for a Pork Loin or a Chicken that needs to be cooked to a doneness.

The newer ones are so finicky. Two different brands and they both run so hot I have to use “warm” as “low”, “low” as “high”, and “high” if I feel like boiling water as fast as I can on the stove!
Pretty much all that needs said. I swear, at least 10% of the posts in this sub are about this issue.

We just replaced our Hamilton beach stay or go because it was impossible to get the rubber seal back on the top.

the 'keep warm' setting is generally in the 140-160 range. If you cooked food at that temp, it would take you too many hours for the food to get up above 140 (minimum safe temperature).
