Your kids may enjoy the low impact better, every kid is different, but as long as they wear the goggles properly and do not take them off on the field, they will be fine.

Palicos don't need paintballs because they can always see where the monster is if I remember correctly.

Personal preferences for paintball brands
I’ve discovered my marker’s favorite is GI 5 Star and America United.
I let it fly with Defy most of the time here in SoCal.
Most of the fields around me sell GI. I shoot 4 star, 5 star, Dynasty, and Evil pretty interchangeably.
Historical perspective on paintball quality from years ago
Not sure about nowadays but 15 years ago I could shoot the shitiest Walmart $20 a case brand and would work just fine for at home dialing shit in.
15 years ago Walmart was still carrying Visible Impact from Gameface/ProCaps. As long as the boxes hadn't been sitting for a year that was *wonderful* paint, and usually ran .687 or larger.

I’m experimenting with some paintballs, but there aren’t any brick and mortar locations here (outside of Walmart) that sell paintballs.

Instead of 50 cal, just start with gel blasters. Way cheaper investment, and you can also do it in your backyard vs going to a field.
The youngest age generally for paintball is 10 years old. Any younger than that is considered too young considering the necessary safety precautions.

There is no one best brand of paint, as freshness and local have massive impact on how well something shoots.

Went paintballing black sweater nothing stained.
Should be alright, but I personally recommend wearing things you're willing to have tear/stain/soil in any manner.
Don't wear anything you care about.
Wash it within a couple days and you'll be fine.
