I'm casually making my bread, but it's pretty hard to plan making the biga, folding every 45 minutes etc.
They are very hands off. One of the major benefits is that most of them have a delayed start timer.

I'm trying to find a teflon free bread machine, or at least one with an aftermarket pan that can be bought that is teflon free.

I have an Elite Gourmet bread machine. For any type of bread that you are making it will beep when it's time to add mix ins.

I have the Elite Gourmet, too. I've only used the "basic" setting for bread, and it beeps during the last knead.
I don't have that specific machine, but the "mix-in" feature is generally for any program that's taking bread all the way through the final bake — but not for any programs that do something else.
Good for making pizza dough
so far I've only done the pizza dough and French bread, however I wanna try doing other things like baguettes, rolls etc.
I use bread dads recipe for homemade hamburger buns. You will never go back.

Just an idea and one of my books suggests this. Weigh everything out except the liquids. Make several bags of premixed ingredients.
I do this for the recipes I make frequently. Saves so much time.
