I have not yet tried sourdough in my bread machine, but I've seen some people who do a dough setting, then let it sit for however long they want, then either take it out and bake it, or use a bake setting on their machine

No kneading, no starter, no expensive bread machine. A 5 year old could do this, and it tastes amazing!
