Once yogurt to be is at the correct temperature and it is in the flask it stays at the correct temperature for at least 12 hours. It works!

I've always wanted to strain it that far I just haven't done it yet. I always use the leftover whey too.
Our strainer says 8 hours. We normally do 6 bc it’s so thick.

Preference for multi-functional appliances
I make mine in the instant pot, to avoid adding yet another specialty appliance to our small kitchen.
My instant pot has been flawless for years. Plus it’s versatile so not blowing storage/counter space on a one trick pony.

don’t set it overnight and expect fresh yogurt in the morning. It will be fresh, but it’s lukewarm.
I use Cisco vanilla soy milk, 1 carton in 4 pint mason jars, with a thickener - I use xanthan gum powder from Amazon.
