My main concern is making sure that the device will keep the milk in the appropriate temperature range to not kill off the probiotics.

100 degrees seems a bit cool for yogurt. My Instant Pot's yogurt setting keeps it to around 110 degr

Are yogurt makers worth it? I have been making my own homemade yogurt for a few weeks now and I'm interested in investing in a yogurt maker. However, it seems to me that you still have to do the scalding and cooling process yourself and the yogurt maker just holds it while it ferments.

What's the advantage of making your own yogurt in the IP? Hi all. Just curious, if you use your IP to make yogurt, why? To save money? Or does it taste better than store bought?
Mostly it's WAY cheaper*, and once you've made it a couple times and gotten it down, it's not a lot of effort. I mostly think it tastes the same, but it is nice to have it be customizable - vary thickness, vary sourness, any topping you want, etc.
Next time you're at Costco just compare the price of GY vs the price of their milk. 1 gallon of milk yields 100 oz of yogurt for me, for reference. I don't shop at Costco so I can't speak for the prices there, but usually GY is a lot more expensive than that.
I buy non-fat milk at Costco for about $1.75 a gallon and get about 60 ounces of greek yogurt after I strain, so definitely cheaper for me.
