Adding a small amount of gelatin will help give it structure at room temperature.
Dehydration will not allow the reconstitution of the creme to be exactly what you need, you can experiment at home for sure, but in my experience dehydration/rehydration changes proteins so much the texture becomes the only drawback to making exquisite meals in the back country.
Maybe you can find a similar one to your idea from a backpacking food company.

I buy a lot of freeze dried stuff in bulk cans. Mountain House, Augason Farms, etc. Some are complete meals that I doctor up to fit my needs, others are separate ingredients that I put together into a meal.

Hi, as the title implies, I am looking for recommendations for freeze dried meals -- entrees mainly -- and the best places you have found to purchase them.
My go to brands are Happy Yak and Nomad Nutrition. They're both Canadian, and don't have nearly as much junk in them compared to some of the big companies like Mountain House or Backpacker Pantry.
Second these—-one great thing about Nomad is that they have vegan options and are far less saltier than the known regulars.
Could you elaborate more? I'm using Mountain House exclusively at the moment as my conclusion was that they were the best even ingredient wise.

I went to the one near me like 2 years ago and couldn't believe the deals on jerky, summer sausage, granola mixes and whatever but since then the prices went up to basically any other stores prices.
