Semolina flour is your friend. Pizza won't stick once you dunk your doughball in this stuff.
for me hydration is irrelevant once you have semolina flour and a good pizza peel.
Just gotta use more semolina.
It helps more than either one alone.

If you really want to get this down invest some time and money into learning to work with a pizza peel.
Honestly though that pizza looks about as delicious as it can be!

Too much flour/semola. Try to shake the flour off the dough before you put stuff on it.
At 800f you should be using a recipe with no added sugar and maybe no oil.
Try a slightly lower temp (~700) I find that the sweet spot to avoid burning of flour.
I had the same issue. And it got sticky at the bottom.
