I have the Hamilton Beach 62682RZ. It's pretty cheap on Amazon. I've used it for whipping eggs and cream, cookie dough, buttercream, and cake batter with no problems.

Works better than my stand mixer in my opinion
It has a size limit however that you have to factor in and also likes more wet dough.

I’ve actually had my Hamilton Beach hand mixer for like 6 years, using it for whipping and frostings and cookie doughs and it’s held up super well.
I got a Hamilton beach hand mixer from bed bath and beyond over 10 years ago and it still works.
I bought a Hamilton Beach hand mixer for $12 over a decade ago and it still works great.
I’ve had my very basic HB mixer for 8 years, use it weekly, and it still works great.

I haven't used one in forever but I feel like having a soft start feature would be nice, as well as a brake when you turn it off.

A hand mixer is perfectly fine to start with for baking as long as you are mixing things like cake batter, whipped cream, brownie batter, creaming butter and eggs together, mixing cookie dough, etc.
