I have a cheap $15 immersion blender from Walmart and it works just fine. Cheapest one they had.
Almost any immersion blender will work. What I'll add though is HOW you use it can be important.

None. None effective. Unless some of the high end mixer I see, $100+, AND you can hold on to it, I don't see any of them doing anything like remotely working with bread dough.
I question my tilt lock at that point, and always feel I have to hold that old bitch down.
It works just fine. It has a size limit however that you have to factor in and also likes more wet dough.

you can lift the beaters out of the dough and spin them to fling off the dough.
with a really stiff cookie dough I cream the sugar and butter together and then use my hand to properly mix in the flour.

There’s very little use for a hand mixer if you have a stand mixer and there’s naturally a ton of overlap between a blender and an immersion blender too.
