Personally, I use a Hasegawa (popular among enthusiasts), which is a wood core, PVA (plastic/same compound as wood glue) cutting board.

Beautiful texture, just thick and heavy enough that it stays put but light enough that my wife can easily move and wash it.
To my mind, if you're going to be using it a lot... you should get the biggest cutting board you can easily clean.
My favourite chopping boards are definitely my biggest ones that I can still clean easily enough.

I've used them a lot and not had one warp.

I prefer a finish that does not include mineral oil (petroleum based), so these are also finished with coconut oil, beeswax, etc.

I've read wood has inherent antimicrobial properties as well, so the grooving doesn't matter as much since bacteria will find it difficult to grow anyway.

Bamboo is just as much of a no-no as glass or anything else hard like that, in my opinion.
My knives won't last a week up to my standards on bamboo, but endgrain? Perfectly fine for at least 2 or 3 weeks.

Cured glue is no more toxic than wood itself.

Just so much nicer to chop on, and noticably better edge retention too.
Not great on edges and they warp pretty easy.
This means that they'll wear down your knife edge a lot faster than using wood or plastic.
I'm guessing HDF for cutting boards isn't quite that hard.

They’re well made and anti slip.
It's a bit heavy due to the 1" thickness but absolutely indestructible.
