I typically aim for about 18x12" length and width. When I'm building boards I always imagine bigger is better but maybe I'm wrong.
In my series of one cutting board, 16 x 11 X 1.25 is my favorite.
As a chef I was taught the general rule for cutting boards is roughly twice the length of your chef knife blade.
To build, I like bigger is better as it’s a larger 'canvas.' To use I prefer to have a variety.
