What it does well!

Key strengths users can’t stop talking about.
Produces a sweeter, less acidic brew
If you want a sweeter and less acidic brew, then the Chemex is exactly what you want.
Great for clean coffees and slow extraction
The papers are pretty much the only thing that affect the drawdown in a meaningful way.
Elegant design that enhances kitchen aesthetics
I love the look of the chemex, but I prefer a sweeter and less acidic profile, so decided on the [Kalita Wave Carafe Brewer].
Dishwasher safe and easy to clean
Getting control over brew temperature, the rate that the water hits the grounds, all of that is wonderful, and tons of people are discussing it already.
For me, your pourover carafe can go in the dishwasher and is dishwasher safe, probably.
Allows for better control over brewing parameters
Why is pour over "better" than a machine? I understand that you have more control of where the water hits the coffee bed.
It isn't, *necessarily*; just that practically speaking most people who are choosing to do pour over are taking the time and attention to brew 'correctly' in a way that is extremely expensive to engineer a machine for.
Awesome! What kettle do you use? Do you know if the bonavita variable temperature one I mentioned is any good?
But my best friend used to have a variable temp and it was awesome! It takes a little longer than some other options but having precise control over the temp is worth the wait.
No plastic components, healthier option
This is a big one for me. I got tired of cleaning a machine. It was gross.
Thicker glass construction improves durability
The chemex is much thicker.
Produces a high-quality brew
We love having a great cup of coffee every day.
Loving the versatility/old school vibe.
Loving the versatility/old school vibe.
Beautiful design enhances kitchen aesthetics
Why are Chemex so praised? My understanding is that it's just a vessel that holds a paper filter, there is nothing "unique" about them.
I don’t think it makes superior coffee but it is very easy to use and deal with at home.
The Chemex has been around over 80 years. Is a single piece functional glassware that makes great coffee.
Makes great coffee with clear flavors
I think the Chemex is praised for the quality you can achieve with the brewer (similar to a V60) as well as the beauty of the brewer.
And it is always very impressive for anyone that has never seen it before.
The Chemex is just too satisfying, non oily, and silt free.
Chemex is my favorite brewer hands down and I have about every brewer imaginable.
Produces a super clean cup of coffee
I love the Chemex! It beautifully designed and produces a super clean cup
I love it. Both as a piece of art (that thing is a damn beauty) and as a brewer.
Allows for relaxing and mild flavor profiles
I always expect the coffee on a Chemex to be more mild, slightly less bitter, and more relaxing.
The clarity and lightness of a Chemex is very relaxing.
Consistent results with specific coffee recipes
Thanks for the links and the explanations! I think I'll try them tomorrow, my holy day for a Chemex.
Produces a clean cup of coffee
do you guys think that investing in this Chemex setup will make a noticeable difference over my current brewing method?
It's my go to out of all my coffee makers.
Elegant design enhances kitchen aesthetics
the Stagg is honestly just so damn aesthetically pleasing I went with it and haven't had any problems over the last year.
Control over brewing parameters
Because of this, you can adjust your coffee to how you like it, and make different beans different ways.
The filter thickness, the shape of the equipment, the coarseness of the grind, and the fact that you have control over the ratio/temp/etc. makes Chemex significantly different.
Produces a cleaner cup of coffee
Thicker filter means cleaner cup of coffee (less affected by the grinds and allows for more flavor notes).
Fun to use
Lets me honest though... using a Chemex is way more fun

Where it needs some work!

Areas to watch—feedback on possible improvements.
Not recommended for beginners due to complexity
You can always buy it later once you get your pour over technique nailed down.
all pour overs methods are more similar taste-wise than they are different, so personally I'd go for a v60 or a Kalita Wave first since they're a lot cheaper.
Filters may alter flavor profile if not rinsed
Paper filters (especially thick chemex ones) filter out coffee oils and all grounds/fines from the brew.
Get the white bleached Chemex filters that are circular. The brown ones taste papery to me even after rinsing.
Manual grinding can be labor-intensive
If you want one small cup of coffee I would agree. But if you want, let's say, two cups of coffee, m
The Lido-E weighs about 4 lbs and I'm pretty sure you could throw it through a brick wall without damaging it so you can really go at it while grinding.
Can be tiring to use with children
We eventually bought a drip pot setup on a timer and that made life so much easier to have coffee ready when it needed to be.
When you say you're not very happy with the first cup, do you mean you just haven't gotten the technique down yet or you're disappointed with the Chemex brew method?
Requires attention to brewing details
that'll be my next purchase hopefully, but after reading all of these responses I'm heavily considering getting a Chemex!

Core Power Plays

The specs and strengths that make it shine.
Discussion about the importance of good water for brewing
And what did the $2 buy you?
As ever, good water is a game changer.
Discussion about the importance of water quality
Classic filters like Brita remove almost nothing from the water.
Discussion about Chemex identification and history
Never made a pour over before, so any advice or direction would be great.
The green stamp should say chemex along with patent number.

Hidden Hero Hacks

Unexpected tricks and side‑door uses you’ll love.
Curiosity about expanding pour-over methods with alternatives like Funnex
I'm a bit curious if it is worth to buy one if I'm already into V60.
If I wanted something to extend the aesthetic, and provide a fresh set of brewing options, I’d be looking at the NotNeutral Gino.
Adding: Brewista makes / made a wave-filter model.
Your remarks about filter availability line up with my personal insistence on being able to buy filters locally.
Suggestions for modifying Chemex components
Replace the wood with carbon fiber and a zip tie.

Buyer’s Cheat Sheet

What to check before you click ‘Add to Cart.’
General comparison of pour-over methods and their strengths
Seems like the hario V60 is for the advance pour over technique methods but provides the best/complex coffee, chemex is moderate technique and kalita wave is most forgiving.
I rotate between Chemex, V60 and Wave (as well as B75, Crystal Eye and blue bottle dripper) as my daily drivers and I second every single word in that answer.
Comparison of cleanliness in brewing methods
The thought of drinking machine coffee just … no.
I never had any goo build up in my pour over machine... Where would it come from?
The ease of cleaning the thing properly is one big reason I opted for a Wilfa machine with a similar setup to Technivorm's, tbh.
Comparison of manual versus electric grinders
Your arms will feel the difference. Don't waste your time and pony up for the Baratza Encore unless you're going for a really low budget setup.
Jeez, my manual grinder must have really sucked. I had one similar to what OP shared, and it took me a few minutes of to grind 25g.
Curiosity about brewing capacity of Chemex
Wait, I feel like I must be misunderstanding "13 cups". Are you saying that thing makes 13 cups of coffee at once?
Inquiry about brewing advice for beginners
Never made a pour over before, so any advice or direction would be great.
Discussion about coffee brewing methods
I am wanting to upgrade my coffee experience.
that always came out delicious - only downside was that you had to do each cup individually and probably used a lot more coffee than other brewing methods.
Discussion on coffee storage tips.
your coffee will go stale faster in sunlight, in a clear jar, in large amounts, and with a lot of air in the container.
Curiosity about brewing techniques and recipes
iced. you can always add more ice, but it's made where it doesn't end up watered down since the ice is part of the recipe & changes flavor over time.
42g @300ml - how do you drink that? And what kind of coffee do you put in? I do 21g for 330ml and has such a good rich taste.
im a newbie to coffee and i went with the stumptown recipe.. i honestly probably just messed something up but imma switch things up and try the atria recipe tmr.
Comparisons of the Chemex to other brewing methods
having a consistent brew is like, the bare minimum.
Curiosity about Chemex's position among other brewing methods
What’s the Consensus on Chemex? I hear a lot of people talk about V60 and it’s various paper variants with respect to paper filters and the like, and it sounds good overall.
Discussion about brewing recipes and techniques
Decreasing the number of pours to reduce agitation and extraction has been a great way to dial in certain coffees, without messing with grind size and temperature.
I feel like this technique gives more expressive brews than Hoffmann's Chemex, more complexity.
I've just watched both videos! True, Winton's recipe is basically the 4:6 method, but I really like
Discussion about different brewing methods and their characteristics
French press and espresso have a clear benefit each, of time and pressure respectively.
They are not better, just different.
Why is AeroPress described as between pour-over and frenchpress? Isn't it an immersion method, like frenchpress (but better fitted for paper filter)?
Aeropress is basically a French press with a paperfilter, which filters out oils and sediment.
Discussion about various brewing methods
It’s a pretty big difference in terms of making a cleaner cup and most importantly a better tasting one.
Discussion on differences between brewing methods
There has to be a difference, otherwise they wouldn't be so popular, right?
While you work on your skills you may even get a worse cup of coffee from the manual brewer.
Impact of water temperature on coffee taste
there is a drastic effect with water temperature

Cautionary Callouts

Know the pitfalls before they catch you off guard.
Discussion about automation in coffee making
Trying to automate/expedite my morning routine which usually involves a V60.
You mean a drip coffee maker?
Unfortunately this is an actual marketing term being used for drip machines with certain advanced features, like a bloom pause.
Maybe something like a Moccamaster? I got one and I’m extremely happy with it.
Discussion about differences in coffee brewing methods
What pour over coffee maker makes the best coffee?
From what i can gather here the best pour over coffee maker is either James Hoffmann or Lance Hedrick.
Cloth filter, for me, since nothing is perfect for every case.
I have an arsenal of brewers all derive subtle characteristic differences.
Discussion about the impact of filter type on coffee taste
The filters is the difference. Neither will make coffee "better" than the other, but the different filters will make different tasting coffee.
I use a capresso infinity conical burr coffee grinder. It's not bad.
Chemex requires attention during brewing compared to Moccamaster
All I can think of is that the Moccamaster pours the water over the coffee grounds for you… I’ll still need to rinse the filter, weigh and grind the beans…
While Chemex isn't as versatile and bendable as something like a V60, it can still be manipulated far more than a batch/drip brewer.
In the end it’s up to you to decide what do you want out of your cups and your overall coffee experience.
Discussion on the advantages of Moccamaster's convenience
Advantage of moccamaster is the time you save boiling water.
The Moccamaster is awesome as a set and forget brewer.
Jealousy about beautiful coffee stations.
All the people on this subreddit with beautiful coffee stations, I shake my fist at you in jealousy.
Inquiry about the source of mugs.
They look really nice.
Discussion on the Chemex's historical significance and design
a bit more to add - it was the first "functional art" to be placed in MOMA.
hands down my favorite brewed coffee is a good natural ethiopian.
