I've always used a Melitta porcelain or a Melitta plastic cone. I'm able to get a pretty good cup with either.
Use what you feel comfortable with. If you like coffee from the melitta, I don’t see a reason to change.

I stopped using a plastic one years ago. I don't care if it says "food grade." I don't trust it, so I avoid it when I can, esp. if hot water is involved
Bitterness can arise from coffee grind size issues

What do you mean stronger? If you want more nuts, dark chocolate notes maybe you should use a washed, darker roast. But if you mean the body created by the oils in espresso, you won't get that with a paper filter.
I mean stronger taste I know it won't be more caffeine. I did 2 brews one with 20g in and 300 out with 60g bloom. Then stir then poured 240 g pour then agitation.
A finer grind will help bump extraction, of course up to the point that brings astringency. You might find benefit in shrinking that bloom a little, though that impact will be relatively small.
