Satisfaction with the Fellow Stagg as a flat bottom brewer
I have timemoreB75, and this is the only flatbottom I tried, but I am satisfied with this.
Have been very satisfied with my v3 for the last 2ish years! I just use it with Kalita papers too, was too cheap/lazy to deal with the negotiator.
The carafe truly is drip-free, even when dribbling liquid out.
Compatibility with Kalita filters

Easy and quick brewing process
10-20 mins to do a pour over normally :o takes 5 mins tops for me
TBT is ~3 mins, prep ~2 mins, 5 mins total. Disposal is easy, filter into trash, and rinse everything.
Thoughtful design and ease of use
There is no steam, the shower is completely sealed in.
Quality coffee experience in a busy household
Making a pour over is not a meditative experience with a toddler
this is my solution 😅 Parenting is rough on a life of finer things 🙈

This is not the answer you are looking for, but I am 100 percent getting the Aiden.

The fit and finish were very nice, and I'd say it looked better in person than the pics.

Love mine, the only negative is the narrow design but it comes with a funnel that compacts into the brewer when you store it away.
Fast brewing process
I also find my Stagg X to be very fast. I find i get good results with less pour, high agitation recipes.

The Stagg walls are completely flat and not angled at all, so the bigger size is just taller which would allow for more coffee.
They are ok, they make good coffee. I prefer my v60, for my use case and have been using it instead.

I absolutely love my XF. I can't bring myself to pay $8 /30 pack of filters though.

Gotta use that expensive fellow carafe you bought 🤷
You'll lose A LOT of VOCs while waiting for the coffee to cool if you brew directly into your drinking device.
Fast brewing time due to design
It brews quickly. A full brew with 600 g of water to 38 g of coffee takes about 2:30.
The fast brew time thing is interesting, but I think it makes sense because with a bloom + 1 big pour, you’ll have a very tall water column, so water is pushed through the coffee faster.
Travel friendly size and shape
I was drawn to the: - travel friendly size and shape - “measuring” cup that is a good reference for ~20 grams

Frustrating profile loading system
Did the custom brew profiles work/load for you? I downloaded the app but don't see any custom profiles on the Aiden.
Now everything works as it should.
Inconsistent measurement settings
the precise setting just lets you dial in more precise units when using the single serve dripper.
It's frustrating that it jumps to 50 unit increments.
Time-consuming process with children

I use my Stagg everyday without a screen. I'm not a fan of the narrow design, but it does make great coffee that I can't argue with.
Less user-friendly than competitors
My palate is not sophisticated enough to appreciate the difference between my v60 and Stagg XF.

For what it’s worth, I really don’t like my Stagg XF.
Finicky for on-the-go use
I came to the same conclusion, I thought the stagg x dripper would be great for on the go, but its very finnicky, I find myself not excited to use it.
I replaced mine with a v60. Hated the stupid filters and the narrow opening to insert grounds.

this is honestly the reason i started with speciality coffee in the first place. life was getting too optimized, and everything about being productive all the time. i needed a moment to slow down. and the amount of cheap shit coffee i was consuming wasn't making me happier either. so i decided to drink less coffee, but to take the time for it, and enjoy it more. since then, I've also taken up gardening as a hobby for similar reasons.

I believe it would make sense you could do small batches in the Stagg XF that would "fit better" in the Stagg X with decent results.
For your recipe (40g coffee and 680g water), the XF is probably what you want.
I'm really tempted to get one- but often do 30 g of coffee so not sure how well the X would work for this.

Why not brew straight into the cup? I see lots of folks brew into a carafe and then pour into a cup and this seems like an extra step and getting a dish dirty for no reason to me.
Honestly I've found my v60 doesn't fit too well on every mug I have. Some it fits really well, but some have a very wide opening and the v60 doesn't sit nicely, or my thermos has a small opening and the v60 also doesn't sit great on that.
I own two Kalita Carafes and I do high pours exchange between them when I brew. It helps to aerate the coffee and it’s fun as fuck.
