I love the look of the chemex, but I prefer a sweeter and less acidic profile, so decided on the [Kalita Wave Carafe Brewer].
The Chemex is specifically for slow extraction and longer brews.

It is by far the easiest to use but you also can't decide to suddenly grind finer cause then you are suddenly looking at a 25min drawdown.

iced. you can always add more ice, but it's made where it doesn't end up watered down since the ice is part of the recipe & changes flavor over time.
300ml of hot water. the other 300 comes from the ice that belts in the bottom. to make it a 42:600. it doesn't melt immediately so you can notice some subtle changes & flavors shift as it melts to proper extraction ratio.
