In my experience, these budge machines are controlled either by temperature or weight. If it's temperature, then you're kinda screwed unless you pull it apart and replace the sensor. If it's weight, then you can trick the switch by adding weight to the pot.
Another good way is to fold tin foil and use as the spacer between the pot and spring

So, is there a way to cook something on "high" level heat for that long, or recipes that require that heat ad time, or am I only going to be able to use the slow cooker function if I am only gone for a short amount of time?

You could also look at Tatung (my mom uses this), instantpot (I use this) or itaki (more of a steamer but it can cook rice) they all use stainless steel inner pots.
I use my instant pot for rice these days as well, we have a cuckoo we barely touch because the instant pot is just more convenient.
