Even when I was single, a 3 or 4 cup rice cooker would be more ideal than one of those gimmicky/travel 1-cup makers due to reliability and the fact that leftover rice can be useful or frozen for later.

So it's non-negotiable: stainless steel. That's it. That's the one sticking point (pun unintended).
I bought a rice cooker with a non-stick insert, rice will still turn brown if I don't use enough water, but it's much easier to clean.
I do essentially the same thing. Perfect rice every time.
Once the cooker switch to warm I unplug and cover the top with a towel to keep vapor in. In about 25-20 minutes, it's ready to eat and NO STICKING.

Your rice cooker has a magnet as part of the circuit that has a Curie temperature a little bit above 100°C.
It’s not the magnet that has a curie temparuture just over 100°C, it’s actually a ferro magnetic alloy plug at the base of the cook pot.
The rice cooker has a special sensor that can feel the temperature inside. As long as there’s water, the temperature stays around 100°C.

In my opinion a rice cooker is safe, it is temperature controlled and unlikely to be scratched or damaged like a pan.
I've used a Zojirushi with a parrot for years. The dangers of Teflon fumes are when the material gets overheated, and a rice cooker never gets remotely close to those temperatures.
And the rice cooker doesn't get so hot that it releases toxins in the air.
