Pork chops are another one that tastes amazing in a sous vide and pretty much suck other ways.
Creme brulle, cheesecake, lemon Curd on anything. Hollandaise.
I make lemon curd for my mother this way and she raves about it. Mascarpone cheese is also amazing with SV.
100%. Tbh I don’t use mine for meat because I can still make good meat in a cast iron or smoker. But anything involving potential curdling is where sous vide really shines. Also tempering chocolate.

Most people start with Steak, it will show off the best parts of sous vide and introduce you to the real challenge which is getting a good sear.
Having a great crust without the grey meat inside and without drying out is life changing, and simple.
I really recommend pork chops. Its so hard to get them just right via any other cooking method but in the sous vide *perfection*.

i just went ahead and got the anova because whatever. but i got a vacmaster p215 which is american made.
it is impossible to get anything involving electronics not ultimately made in china.
If it wasn’t your sous vide would cost $2000. You can assemble some parts and say made in US.

It's big enough to do a 4-rib prime rib, and is dead simple to operate — set temperature, set time, put lid on and walk away.
It's been without issues since 2017, when I purchased it refurbished.
I’ve had my Gourmia Sous Vide for about 8 years or so.
