Anyone with advice using two at the same time?
I have more than two. Simultaneous uses include one bath for meat and another for veggies, or two baths or two in a very large bath for large cooks (including catering for my daughter's wedding).
Honestly, I want to get a second at some point just to have two different temps cooking at once in different containers.
You could cook steak in one, and potatoes in the other.

Can cook food from frozen easily
Part of the beauty of sous vide is that it's super easy to cook from frozen because the immersion circulator will bring food up to temperature gently and evenly.
Makes cheap cuts of meat tender and flavorful
Always amazed what SousVide can do for a terrible cut of meat.
This is mostly what I use my sous vide for.
I was amazed at the roast beef flavors.
Great for cooking pork tenderloin
I love pork tenderloin in the sous vide, and I wasn’t a fan of that cut before. I especially like that they are already vacuum sealed, so i can just throw it in.

Not effective for soft boiled eggs
I don’t throw hate, but am a soft boiled egg folk and can confirm I was disappointed.
My preferred soft boiled consistency for an egg can't be reached by bringing the whole egg to a stable temperature, which is what sous vide is so good at.
Setup may not be worth it for just eggs
I make boiled eggs fairly regularly and don't use the sous vide as much, so setting it up just for that is probably not worth it (as you said).
