Most people start with Steak, it will show off the best parts of sous vide and introduce you to the real challenge which is getting a good sear.
Here's the first steak I ever did sous vide. Came out AMAZING! Med Rare edge to edge. Great char/grill marks.

Je travaille en restauration et je suis à l'aise avec l'utilisation de ce genre d'appareil par contre j'ai aucune idée des critères pour choisir un modèle avec un bon rapport qualité prix.
Je l'ai choisi après beaucoup de recherches et de comparaisons, et j'en suis très satisfait, même si on est sur la fourchette haute des prix.
J'ai une machine foodsaver depuis deux ans que j'utilise avec le rouleau pour faire des sachets sous vide et les conteneurs en fonction des besoins et j'en suis très content surtout pour le prix.
J’ai celle de Lidl depuis 3-4ans je l’utilise occasionnellement et elle fait le job.

I'm not married to the idea of using a circulator instead of a bath, but I'm interested if anyone else in the community has sought out and found trustworthy equipment that isn't made in China.
i just went ahead and got the anova because whatever. but i got a vacmaster p215 which is american made.
it is impossible to get anything involving electronics not ultimately made in china.
If it wasn’t your sous vide would cost $2000. You can assemble some parts and say made in US.

My last sous vide machine crapped the bed after years of dedicated service and I am now in the market for a new one.
I absolutely love my joule, at the time I got it because it was smaller and had more power (cue tollman grunt) than the anova.
Joule has the best performance and features, unless you have a hangup using a smartphone to control it, but many brands will get the job done.

The short time with the unit left me impressed, I may buy one later this year.
