Snoop's Take

The Cuisinart Ice Cream Maker Machine, 1.5 Quart is designed to simplify the process of making delicious frozen treats at home. With its patent-pending mixing paddle, this machine can churn out ice cream, sorbet, or frozen yogurt in just 20 minutes, eliminating the need for ice and salt thanks to its double-insulated freezer bowl. Consumer sentiment around the Cuisinart ICE-21P1 is overwhelmingly positive, with many users praising its ease of use and effectiveness for beginners. "It is so easy to use," remarked one user, highlighting that it has encouraged many to experiment with homemade ice cream recipes. However, some feedback noted that the machine can stop churning if the mixture becomes too thick and that it requires proper freezing time for the best texture. Overall, the Cuisinart Ice Cream Maker is highly recommended for anyone looking to enter the world of homemade ice cream making. Its affordability and user-friendly design make it a fantastic choice, especially for those new to ice cream making.

What it does well!

Key strengths users can’t stop talking about.
Easy to use for making ice cream
It is so easy to use. I was intimidated for years about making ice cream.
The ice cream turned out fine but the machine stopped churning by it self at one point around 25 mins.
Tride it with less and it worked just fine 😁
I have one and like it. I don’t find it noisy and have made up my own recipes because I thought the ones they had had too much sugar/calories.
Works great for beginners
My $70 (closer to $50 when I bought it) 1.5 quart Cuisineart ice cream maker works great!
For beginners the Cuisinart ice 30 BC is pretty solid too.
I have the same one - ICE-21P1.
There are *a lot* of entry-level ice cream makers out there on like Facebook Marketplace for $35 tops.
Affordable compared to high-end models
It’s only worth it if you think you’d enjoy making ice cream as a hobby.
Once you become an ice cream junkie, you can splurge on something with a built-in compressor.
Allows for ingredient customization
And you know what's actually going into the ice cream instead of ingredients you can't pronounce
Spins faster and scrapes closer than ICE-30
I'm not familiar with the Kumio but the ICE-21 scrapes closer and spins faster with more overrun, compared to the ICE-30
Great for beginners
Best home ice cream maker? Hey guys! I'm looking at all the ice cream makers and feeling overwhelmed with choices...what is the best machine for a newbie with kids? Thaaaanks!
Agreeing with the others that the Cuisinart ICE-21 (or even ICE-20) is a great place to start. In my experience it's also pretty easy to find them for super cheap on FB Marketplace/craigslist/Kijiji/etc.
Affordable entry-level ice cream maker
I have this model for the price, it is a great entry to ice cream making.
Bowl requires longer freezing time for better results
Can I go ahead and use it before the 24 hours are up? How long do you all "pre-freeze" your equipment?
Most the time I can get it to make ice cream, but it's usually still softer than I'd like, and at least one time it didn't really work at all.
I ended up freezing the bowl for the second batch about 30 hours. It passed the slosh test, but I did notice that *after* the second batch churned, the bowl was much more thawed than the first, in terms of creaminess and texture.
Keeping the mix cold improves ice cream texture
Everything should be as cold as possible, your bowl might be ready if your mix is cold.
You want the bowl as cold as you can get, since that’s the only thing freezing your mix.
Affordable for home cooks
This one looks like it changes the temperature based on the ice cream hardness but I'm not sure what kind of overrun I might expect
if you're just a home cook and just want to make a quart at a time, then this is the perfect machine for a reasonable cost
Good ice cream quality for the price
Can confirm! I have a base model from Cuisinart and it works really well.
Happy with the switch from ice and salt machine
I keep it in there all the time so I can make ice cream at a moment’s notice.
Enjoyable experimentation with unique flavors
My favorite experimentations : coconut and saffron, blood orange and Sancho pepper, kaki and black tea.

Where it needs some work!

Areas to watch—feedback on possible improvements.
Calibration issues causing inconsistent ice cream placement
It’s probably not calibrated correctly
Yup, the treats are coming down in pairs. Sticky is consistent.
The stick inserter doesn’t appear “smart”, so that means the issue Is upstream. It is definitely a timing or calibration issue with the machine that creates or places the ice cream on the trays.
Its likely there are two extruders further up the line and they got placed too close together after maintenance. That would cause the Left then Right alternation. Funny how the little things matter 🤣
Sticking issues with the ice cream
It‘s even the same side, it‘s left, right, left, right…
Way easier to just change the stick rate to a faster speed. Done easy.
It's not the sticks that aren't right. It's the ice cream.
Machine stops when ice cream is too thick
My ice cream machine also stops turning after around 25 mins when the ice cream becomes too thick.
Takes up freezer space
You have to keep the tub in the freezer (which takes up a lot of space) for a really long time before you make ice cream, it's kind of loud, and it takes a lot longer than a creami would
Makes horrible ice cream
It made horrible ice cream.
Can be messy during use
Only downfall is it can be messy
Not cost-effective for everyone
I have 0 experience with other machines, but the ice cream is just as good if not better in many cases then store bought.
Freezer bowl requires long freezing time
A couple of things (apart from freezer bowl requirements) that make me think to jump to a different machine with compressor like the Kumio
Ice cream turns out icy without proper sugar
this is my first ever batch so I'm completely new to this.
you need more sugar to prevent the formation of ice crystals.
there is no ice cream without sugar. It's just a frozen dessert without sugar, the texture will be all off.
Requires specific ingredients for better texture
I make sugar free ice cream for my father in law who has diabetes and I have found that allulose is a good sugar replacement and doesn’t make the ice cream too hard or icy.
Need to add liquor to improve scoopability
I always add a tablespoon of liquor, especially vodka but sometimes whiskey or rum.

Core Power Plays

The specs and strengths that make it shine.
Discussion on modifying motor speed for better performance
One downside about to be solved!
Curiosity about machine capacities and specifications
What's the final capacity (after mixing) of your Pola? When capacity is listed for a machine, does this mean the final mix capacity or the starting capacity?
Discussion on freezing time and temperature for optimal results
Obviously this is a thermo dynamics question. And obviously you need to keep the freezer bowl in the freezer until it’s frozen solid.
Discussion on batch sizes and freezing methods
The hardness gauge just controls how long it churns before the timer goes off.

Buyer’s Cheat Sheet

What to check before you click ‘Add to Cart.’
Discussion comparing different ice cream makers
so my real question is, for someone who is a semi-enthusiast, is it worth it to spend ~$200 more for a Musso Lello machine?
The musso is better but it's not needed to make world class ice cream.
if you love great ice cream, get a machine that will actually let you recreate it.
simply wonderful texture. would definitely reccomend getting good thermometer too though...my texture has significantly improved since i started measuring the custard cooking temp.
Discussion on machine types for ice cream making
best ice cream machine for dairy-free ice cream? hi friends i'm hoping to get into the world of ice cream making :)
Since a lot of people do end up selling, i would take a look at second hand purchase. I bought a cuisinart ice something whatever retail 80 for 15 bucks.
Mention of other brands and models
Wirecutter claimed that the ICM-15LS was better than the other Whynter machine for non-dairy, and those two were their top recommendations, which is at least one data point.
Discussion on comparing to Ninja Creami
I'm wondering if it's comparable.
Discussion on recipe adjustments and techniques
Which Cuisinart recipe was it - I’ve had two Cuisinart machines and they came with very different recipes?
Was the bowl of your maker thoroughly cleaned? that might be a reason for your ice cream not turning out right.
General thoughts on compressor vs. non-compressor ice cream machines
Thank you. What do you like so much about compressor machines? What's better about them, other than not having to churn by hand?
Actually, no. Small company and limited importation. However, they're built like tanks and there is nothing that really breaks on them without abuse.
Mention of cost and value comparisons for ice cream makers
Thank you. Could you give us some idea of the relative value / merits of the ice cream makers in those cost ranges?
Doubling your investment get's you the Musso and the power to merrily churn your way down 10-15f and produce a ready to plate product with no perceptible iciness and other-worldly smoothness in 15-20 min.
Avoid the breville. If you’re looking for a cheaper compressor machine, look at a whynter or cuisinart.
Discussion about upgrading from lower-end to higher-end machines
for something I'll use a lot, spend more for a used / refurbished higher-quality and longer-lasting machine.
I upgraded to a lello musso pola for $979 off of eBay and it was basically brand new (open box).
Discussion on budget concerns for ice cream makers
I will save my money then. The machines that are usually recommended here are over my budget and the ice and salt machines are so cheap but it seems that in the long run I would be wasting my money.
Local thrift stores may have affordable Cuisinart models
It's worth checking your local thrift stores to see if they have any. I've seen a couple Cuisinarts at Goodwill for just a few bucks.
Curiosity about reduced-sugar ice creams
I wonder if anyone's tried their luck at reduced-sugar ice creams that are sweetened with monkfruit or similar.

Cautionary Callouts

Know the pitfalls before they catch you off guard.
Discussion on ice cream spacing and extruder issues
Yep, definitely a spacing issue. You can clearly see them in groups of two.
Probably set for the spacing between two boxes when it's between two Popsicles in the same box, and it thinks it's between the two in the same box when it's between boxes.
I reckon it’s more like the ice creams are not placed right by the previous stage. They’re all over the place.
Discussion on overfilling causing machine to stop
I’ve never churned any ice cream that long in my cuisinart.
Discussion about ice cream overrun and machine performance
I'm specifically looking for a sub‑$300 machine that will produce smooth ice cream/custard with lower overrun.
It’s subjective based on individual opinions. I’ve had all 3 and the ICE100 makes on average, 20% with very good consistency ice cream.
Personally, I can highly recommend the Cuisinart BCU 100. It makes fantastic ice cream.
Discussion on noise levels of previous Cuisinart models
And it is not as annoying sounding as my old one (which is a major win).
Ice cream needs to harden after initial churn
All ice cream starts out at something closer to soft serve texture until you freeze it hard in the freezer.
They all come out “soft serve” consistency, by the way.
Nostalgia for traditional ice cream making methods
It depends on how much work you want to put in for what will ultimately be an inferior product.
Having never used the newer ice cream makers you're talking about, I can only say good things about the traditional method.
